Vinacce: an ethnobotanical study of the sustainable uses of grape pomace found in an injured nerve recipe of the Medici.

Historically, pomace is not often described as a topical for medicinal use; however, a recipe from Anna Maria Luisa de’ Medici describes the medicinal use of pomace as a topical. Traditionally, pomace was distilled to make other alcohols such as grappa. Grappa was then used as a solvent with additional herbs for medicinal purposes. In Anna Maria Luisa de’ Medici’s recipe, pomace was used as a topical to treat nerve damage, and modern research has supported this recipe by demonstrating that the active ingredients in pomace are useful when treating nerve damage. During the time of Anna Maria Luisa de’ Medici, pomace was mainly a waste product; today, a wide variety of uses are being explored. These uses include biogas, fertilizers, and food fortifiers. Overall, the use of pomace in all these areas speaks to our sustainable values as a society in our modern use of plants.
